2-Ingredient Pancakes

Ingredients

  • 1 banana
  • 2 eggs
  • Butter for cooking
  • Toppings for serving
  • Optional: ⅛ tsp baking powder for fluffier pancakes
  • Optional: ¼ teaspoon vanilla extract
  • Optional: 1 tablespoon unsweetened cocoa powder

Instructions

  1. Thoroughly mash the banana.
  2. If desired, add and mix in any additional flavorings or baking powder.
  3. Stir in the eggs.
  4. Heat a pan over medium heat and melt a little butter.
  5. Once heated, drop about 2 tablespoons of batter into the pan.
  6. Cook the pancakes until the bottoms look golden, about 1 minute.
  7. Flip the pancakes and cook for about another minute.
  8. Transfer onto a warm serving plate.
  9. Serve warm with any toppings of choice.

Tips

  • Keep the pancakes small so that they cook more quickly and are easier to flip.
  • Flip with a thin spatula.
