Cacio e Pepe

Ingredients

Servings: 1

  • Bucatini or Spaghetti
  • ½ tsp black pepper
  • ⅓ cup Pecorino Romano
  • 1 tbsp unsalted butter
  • ⅓ cup pasta water

Instructions

  1. Bring a large pot of water to a boil and generously season with salt.
  2. Add pasta and cook until al dente.
  3. Drain pasta, reserving ⅓ cup pasta water.
  4. Remove from heat and mix in the butter.
  5. Heat a skillet over medium heat and add butter and pepper. Let sizzle for 1 minute.
  6. Add in pasta water and cheese. Stir until melted and combined.
  7. Add in your desired amount of pasta into the skillet and let cook for about 3 minutes. Serve.

Tips

  • As a substitute for pasta water, use ¼ tsp of cornstarch with 1 cup of warm water and a pinch of salt.
  • Parmesan cheese may be substituted for pecorino romano.
