Greek Yogurt Cinnamon Rolls

Ingredients

Servings: 5

Dough
  • 1 ¾ cup flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 ¼ cup greek yogurt
  • 1 tbsp melted butter for brushing
Filling
  • 1 tbsp cinnamon
  • 2 tbsp sugar
    • Icing
      • ¼ cup greek yogurt
      • 1 tsp vanilla
      • ½ cup powdered sugar
      • Milk to thin

      Instructions

      1. Preheat the oven to 350F. Line a baking pan with baking paper.
      2. In a large mixing bowl, sift together the flour, baking, powder, and salt.
      3. Combine the flour mixture with the greek yogurt. Knead the dough with your hands until fully combined and shape into a ball.
      4. Lightly flour a kitchen surface and roll out the dough into a thin rectangular shape (½ of an inch thick) using a rolling pin.
      5. Combine the sugar and cinnamon. Evenly distribute over the dough.
      6. From one end of the dough, slowly roll it up all the way. Use a sharp knife to slice the roll into 5 pieces for larger buns.
      7. Place each bun onto the prepared pan. Brush with melted butter.
      8. Bake for approximately 25-30 minutes, or until the edges start to turn golden.
      9. While the cinnamon rolls are baking, combine the icing ingredients.
      10. Remove the buns from the oven and let cool. Once cooled, spread the icing over the top of the cinnamon rolls.

      Tips

      • You can toss either fresh or frozen blueberries into the filling of the cinnamon rolls.
