Dough
- 1 ¾ cup flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 ¼ cup greek yogurt
- 1 tbsp melted butter for brushing
Filling
- 1 tbsp cinnamon
- 2 tbsp sugar
Icing
- ¼ cup greek yogurt
- 1 tsp vanilla
- ½ cup powdered sugar
- Milk to thin
Instructions
- Preheat the oven to 350F. Line a baking pan with baking paper.
- In a large mixing bowl, sift together the flour, baking, powder, and salt.
- Combine the flour mixture with the greek yogurt. Knead the dough with your hands until fully combined and shape into a ball.
- Lightly flour a kitchen surface and roll out the dough into a thin rectangular shape (½ of an inch thick) using a rolling pin.
- Combine the sugar and cinnamon. Evenly distribute over the dough.
- From one end of the dough, slowly roll it up all the way. Use a sharp knife to slice the roll into 5 pieces for larger buns.
- Place each bun onto the prepared pan. Brush with melted butter.
- Bake for approximately 25-30 minutes, or until the edges start to turn golden.
- While the cinnamon rolls are baking, combine the icing ingredients.
- Remove the buns from the oven and let cool. Once cooled, spread the icing over the top of the cinnamon rolls.
Tips
- You can toss either fresh or frozen blueberries into the filling of the cinnamon rolls.
