- 1 ¾ cup flour
- 2 tbsp matcha tea powder
- 1 tbsp baking powder
- ½ tsp salt
- 2 large eggs
- ¾ cup sugar
- ½ cup coconut oil (or butter) melted
- ½ cup milk
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350F. Spray or line a 12 count muffin pan.
- Mix together the flour, matcha, baking powder, and salt in a medium bowl. Set aside.
- Whisk eggs, sugar, and vanilla in a large bowl or stand mixer until smooth.
Slowly add in the oil/butter and milk. Whisk until blended.
- Gradually add in the flour mixture and stir until the batter is uniform.
- Scoop the batter into each muffin cup so that each cup is between ¾ to 1 cup full.
- Bake for 20-30 minutes or until cooked through. Let cool for 5-10 minutes before serving.
Tips
- Add in ½ cup of chocolate chips or 1 cup of berries, such as blueberries or raspberries!
- Do not overmix the dough.
