Matcha Muffins

Ingredients

Servings: 12

  • 1 ¾ cup flour
  • 2 tbsp matcha tea powder
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ¾ cup sugar
  • ½ cup coconut oil (or butter) melted
  • ½ cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350F. Spray or line a 12 count muffin pan.
  2. Mix together the flour, matcha, baking powder, and salt in a medium bowl. Set aside.
  3. Whisk eggs, sugar, and vanilla in a large bowl or stand mixer until smooth.
  4. Slowly add in the oil/butter and milk. Whisk until blended.
  5. Gradually add in the flour mixture and stir until the batter is uniform.
  6. Scoop the batter into each muffin cup so that each cup is between ¾ to 1 cup full.
  7. Bake for 20-30 minutes or until cooked through. Let cool for 5-10 minutes before serving.

Tips

  • Add in ½ cup of chocolate chips or 1 cup of berries, such as blueberries or raspberries!
  • Do not overmix the dough.
