Banana Oatmeal Cookies

Ingredients

  • 1 cup rolled oats
  • 1 ½ large overripe bananas, mashed
  • ¼ cup of any nut butter
  • Handful of strawberries, chopped

Instructions

  1. Preheat the oven to 350F. Line a sheet pan with parchment paper and set aside.
  2. In a large mixing bowl, mix the mashed banana with your choice of nut butter.
  3. Mix in the rolled oats until fully combined.
  4. Fold in chopped strawberries and your choice of mix-ins, such as chocolate chips.
  5. Lightly wet your hands and form 8 balls with the mix. Place each ball on the lined sheet pan and press into a cookie shape.
  6. Bake for 10-12 minutes, until slightly golden on the edges. Remove from the oven.
  7. Allow to cool on the sheet pan for 10 minutes before serving.

Tips

  • Use ripe bananas.
  • Add your own favorite mix-ins before baking, such as vanilla extract, chocolate chips, or raisins.
