- 1 cup rolled oats
- 1 ½ large overripe bananas, mashed
- ¼ cup of any nut butter
- Handful of strawberries, chopped
Instructions
- Preheat the oven to 350F. Line a sheet pan with parchment paper and set aside.
- In a large mixing bowl, mix the mashed banana with your choice of nut butter.
- Mix in the rolled oats until fully combined.
- Fold in chopped strawberries and your choice of mix-ins, such as chocolate chips.
- Lightly wet your hands and form 8 balls with the mix. Place each ball on the lined sheet pan and press into a cookie shape.
- Bake for 10-12 minutes, until slightly golden on the edges. Remove from the oven.
- Allow to cool on the sheet pan for 10 minutes before serving.
Tips
- Use ripe bananas.
- Add your own favorite mix-ins before baking, such as vanilla extract, chocolate chips, or raisins.
