Cranberry Oatmeal Cookies

Ingredients

Servings: 24 cookies

  • ½ cup unsalted butter
  • 1 cup creamy peanut butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 3 cupps oats
  • 1 tsp. baking soda
  • ½ dried cranberries

Instructions

  1. Preheat oven to 350F.
  2. With an electric mixer, beat the butter, peanut butter, sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla, beating until well combined.
  4. Add oats and baking soda, mix on low speed.
  5. Stir in the dried cranberries.
  6. Drop two tabletspoon sized portions of dough onto a baking sheet. Flatten and shape the dough into a cookie with the palm of your hand.
  7. Bake for 10-12 minutes, or until golden brown. Let cool for at least 5 minutes before transferring.

Tips

  • Substitute dried cranberry for chocolate chips or add walnuts.
