Olivier Salad

Ingredients

  • 3 medium potatoes
  • 3 large carrots
  • 4 hard boiled eggs
  • 1 can of canned green peas
  • ½ lbs of ham
  • 8-10 dill pickles
  • Mayonnaise
  • Salt
  • Black pepper

Instructions

  1. Boil the potatoes and carrots (in its skin) under a lid until they are easily pierced through with a fork. Cool down to room temperature.
  2. Dice the potatoes, carrots, eggs, pickles, and ham into small cubes. Add into a large bowl.
  3. Add in drained green peas.
  4. Stir until all ingredients are well combined.
  5. Add in mayonnaise (spoon by spoon, until the desired consistency is acheived).Season to taste with salt and pepper.

Tips

  • Add the pickles to taste.
  • Add 1 tsp of mustard if desired.
  • Use a mandoline slicer to easily cut up the vegetables into small cubes.
